Westville Mac & Cheese
For the sauce:

Butter 1Tbs

Neutral Oil 1Tbl

Garlic Minced 1 clove

Cheddar yellow (shredded)1/2 C

Smoked Gouda (shredded) 1/4 C

Half & Half 2 C

Thyme fresh (chopped) 1tsp

Rosemary fresh (chopped) 1tsp

Mustard Powder 1tsp

Old Bay 1tsp

Onion Powder 1tsp

Garlic Powder 1tsp

Salt to taste

Black Pepper to taste
Assembly:

Cavatappi Pasta 8oz

Sauce 2 C

Smoked Gouda 1/2 C
Instructions:

Pre-heat the oven to its broiler setting on high.

Bring a 4 quart pot of water to a boil, and season with salt. Add the Cavatappi pasta and cook to desired consistency or follow the instructions on the box of preference.

In a medium saucepan, heat the butter and oil over medium heat. Add the garlic and sweat briefly, aim for a light golden color. Add the half and half and allow it to come to a light simmer. Once simmering, add all the rest of the components under the sauce list. With a whisk, stir until the cheese has completely melted and incorporated. Allow it to simmer for another 2 minutes and finish by seasoning with salt and pepper to taste.

Combine the pasta and the sauce in a desired baking dish and top with the additional shredded smoked gouda. Place in the broiler until bubbling and golden brown
