PESTO MASHED POTATOES
GARLIC MASH

Red Potatoes – 8 Cups

Half and Half – 1.25 Cups

Butter – 1/3 Cup

Roasted Garlic – 3 Tbsp

Salt and Pepper – 2.25 Tbsp
PREPARATION:
Boil the potatoes until soft. Combine all other ingredients in a sauce pan until simmering. Mash the potatoes with a ‘potato masher’. Evenly fold all other ingredients into the mashed potatoes. Reserve.
PESTO

Basil – 1 Cup

Spinach – 2 Cups
-
Parmesan – 1/3 Cup

Sunflower seeds – 1 Tbsp
-
Garlic – 1 Tbsp
-
Salt – 1/8 Tbsp
-
EVOO – 1.5 Tbsp
-
Canola Oil – 2.5 Tbsp
-
Water – 1 Tbsp
-
Fresh Lemon Juice – 1/2 Tsp
PREPARATION:
Combine all ingredients in a blender until smooth, reserve.
PESTO MASH

Pesto sauce – 6oz
-
Garlic Mash – 48oz
PREPARATION:
Combine in a pot or large saute pan.
